The olive tree has been grown in the Mediterranean basin since prehistoric times, but it was the Greeks who invented Olive Oil in 3000 BC and they have been producing and exporting it ever since.
Extra virgin is the highest quality and most expensive olive oil classification. The way to make it is by cold extraction and it hasn’t changed since thousands of years: Extra virgin olive oil is made simply by crushing olives and extracting the juice.
It is the only cooking oil that is made without the use of chemicals and industrial refining.

A Gourmet Extrissimo  Extra Virgin olive oil from Chalkidiki Region of Makedonia Northern Greece.

Produced by cold extraction from early harvested olives, it has a bright green color and a fruity and rather spicy flavor with distinct aroma.  It has the substantially lower acidity of 0.2% compared with the 0.8 % acidity of extra virgin olive oil which comes from mature olives.

Olive oil has many nutritional benefits when consumed, but it is also frequently applied to the skin and hair.

Apart from its popular moisturizing effects, olive oil contains vitamins A, D, E, and K and acts as an antioxidant, which is a substance that prevents oxidation and cancer. When applied to the skin, antioxidants prevent premature aging. Also, some research suggests that putting olive oil on the skin after sun exposure may fight off cancer-causing cells.

Olive oil has been shown to have antibacterial properties, to treat a variety of skin conditions including psoriasis and eczema and improve healing in people with foot ulcers caused by type 2 diabetes.

Fortunately without success, many often try to imitate the best!  Beware of frauds involving lower grades of olive oil sold as “extra virgin”, claimed to be “imported from Greece”. Always look for genuine extra virgin olive oil produced in Greece, with at least one of the following certifications:
